Summer Celery Salad
Celery is totally underrated. Especially the leaves! Why oh why do grocers cut them off??? When I buy celery I dig through the bags looking for the ones with the most leaves and tender centers. I love the center whitish areas. So delicious. This salad celebrates the celery and a nice tang. Perfect for a hot day's lunch.
Note: this salad is perfect to pre-chop and take to lunch since it can last days chopped without getting icky. It doesn't usually last longer than a day or so however.
SUMMER CELERY SALAD
makes one serving for lunch portion
- 3 stalks celery with leaves
- sliced red onion
- 5-8 quartered cherry tomatos
- 1/2 avocado cubed
- 2 tbs herb vinagrette
- crumbled fresh feta
Chop your celery stalk and remove the leaves. Slice your red onion really thinly. Amount of red onion is up to you. I like mine with a good 1/4 of a red onion. Add to bowl with quartered cherry tomatoes and avocado cubes. Toss with a herb vinaigrette (see heirloom tomato salad) or you can chop your favorite herbs finely and add to lemon juice and olive oil with a pinch of salt and pepper. Toss salad and crumble feta on top.
This warm lentil salad is something that gets me through those nights when I cannot think of what to make for dinner. I have a bunch of leftovers in the fridge and some staples in the pantry.
