Lemon-Buttermilk Pudding

Lemon pudding is one of my absolute favorite desserts, anything that is gooey and citrusy in fact makes the top of the charts, lemon danish, lemon cake, lime, grapefruit etc. The combination of custardy-goodness with the bite of lemon is one of those opposite tastes that are a match made in heaven.

Last winter, our family plus family friends ventured to a nearby new restaurant down in Tiverton, RI. The Red Dory is a delightful small seafood restaurant. To be honest, their vegetarian fare options were limited, so the food for my dinner was ok, but it's not what they are known for. Many had fabulous fish and seafood, with local and fresh flavors. Dessert however was a favorite. We delighted in their housemade lemon pudding for dessert and I am pretty sure some forgot their table manners and licked their dishes. Between my mother who has the same taste in desserts, and our family friends who also love a good lemon dessert we could have devoured a second round!

To my delight the latest edition of Edible Rhody from the great Edible community published the recipe from the Red Dory and their delightful Lemon-Buttermilk Pudding. We altered the dish, since we had a lot of other cooking on our plates that day, to just using a store bought raspberry sauce, with fresh berries on top to create a lovely dessert that will most likely become a family favorite for years to come.
